4-stage aging process. The 4-stage process begins with the traditional fermentation of malt and grain whiskey in individual oak barrels. The grains are then mixed together in a whisk and fermented a second time in neutral oak barrels. Malt mixers all go through the same process. In the third stage, grain and malt blenders are blended into the final mixture, followed by a third fermentation in neutral oak barrels. In the second and third stages, aging is generally 6 months, but the final decision depends on the judgment of the master mixer. After the third stage, the blended whiskey undergoes four final finishes in sherry casks, for a maximum of one year. This process creates an exceptionally smooth and complex whiskey.
